You can probably use a lot of recycled materials to build them, and it's decently in demand with travelers now.

Technology for those, also advancing fast. Instead of composting toilets you can get combustible ones, much cleaner.))

I can write up a rough business plan for you, I did one for a client doing something similar in the French Alps.

There's an idea. It would eliminate the need for either multiple small septic systems or a singular large one, either of which would be a pain.))
